Pickles, Pineapple and Fried Rice?

So what do you when it's 10 PM, your husband and son are away for the night and you have the whole house to yourself? Well if you're me, you bake a pineapple upside down cake, binge on leftover Chinese food and can a dozen jars of pickles. You could say that I know how to have a good time. Either that or I have a big L on my forehead.

This was my first attempt at canning pickles. I have to admit, it was actually pretty fun and not too labor intensive. If I was a rapper, I'd call myself 'Pickle Daddy Diddy'.

Ok, I'm getting a little delirious. Off to bed!

    Any man who spends the evening baking that lovely cake and canning pickles has my respect. The kitchen is THE place to have FUN! Go for it!!!

  3. What kind of pickles? It looks like you have some pickled peppers and some dills? I still need to make some pickles this summer. Today is jamming day though.

    Daphne, I picked some Hungarian Wax peppers and some dill cukes. I also used some of that Pickle Crisp people have been talking about. Hopefully that helps - nothing worse than a soggy pickle.

  8. It does look pretty. One of my favorite summer treats is the typical Caprese salad. Nothing is better than fresh tomatoes, mozzarella, and basil.
