Making Homemade Potato Chips

I made homemade potato chips this past weekend using a few of my All Blues. They turned out to be some of the best I have ever had. Who knew that something so delicious would be so easy to prepare. I will never look at store-bought chips in quite the same way.

Did you know that freshly dug potatoes make the best chips? As a potato sits in storage, its starch slowly converts to sugar, causing it to turn brown when fried (a sad fact I discovered while trying to make chips from store-bought potatoes).

The preparation for homemade potato chips couldn't be simpler. I used a Japanese mandolin to make evenly thin slices. (And yes, there is such a thing as too thin!) Then I fried them in canola oil that had been heated to 375 degrees F. Dropping the slices one at a time into the oil prevents them from sticking to one another. It also helps to stir them a bit to ensure an even fry. You know they are ready when the oil stops bubbling - about 3 to 4 minutes. I like to sprinkle a bit of salt, pepper, garlic powder and chili powder over the hot chips. The sooner you eat them, the better. However, they will store well in an airtight container or plastic bag.

  1. They look delicious. Never tried home-made potato chips before. But my mum sometimes made us cassava chips (topioca) or banana chips for us sprinkle with salt or fry them with chili paste.

  2. That would be an easy habit to get into! They look delicious. I like home made crisp fried potatoes and crispy hash browns as well. Last Sunday's late start brunch was eggs (from our chickens) served with a side of crispy hash brown potatoes (from our garden). Can it get any better than that?!

  3. They look so pretty, almost too pretty to eat! But the way you describe their flavor, I'm sure I could be convinced to change my mind really fast. Yummy. Store leftover potato chips? Is there such a thing? :-)

  4. Blue potato chips are one of my favorites. I love the brand "Terra Chips" which makes blue chips. I'll have to grow my own and make my own! Yours looks amazing.

  5. I have never seen purple potato chips before. They look very pretty and so evenly thin!
    I think that I could eat all of them in less than a minute.

  12. Wow Thomas they look beautiful and I bet they are delicious! I have a similar recipe, but I bake them instead of frying them. I put them in the oven on a cookie tray until they are cooked. It does not take long, but sometimes you need to flip them.
